On Saturday morning I woke up early to get started on cooking all my CSA goodies. I wanted to make myself and nice light no fuss breakfast so I cut up the grapefruit, tossed it in a bowl with some olive oil, salt, sugar, goat cheese, mint and black pepper. It was light, easy, sweet, savory and refreshing.
- 1 large grapefruit
- Olive oil
- Salt & pepper
- Sugar or honey
- Goat cheese or feta cheese
- Chopped fresh mint
1. Supreme the grapefruit (watch this video if you are like “WTF does supreme mean?”)
2. Drizzle with olive oil, honey (or sprinkle with sugar), salt, pepper and crumbled cheese.
3. Garnish with fresh chopped mint and serve.
