This is a great side dish with meats or heavily spiced food. The crisp clean flavors in this salad, which is kind of like Raita, cut the heaviness of meats and the intensity of lots of spices. It’s super easy, just chop up the veggies, mix in the yogurt and herbs and serve.
- 1 tomato, chopped
- 1 cucumber, peeled and chopped
- 1 Tablespoon of minced mint
- 1/2 clove of garlic, grated
- 1/2 cup of Greek yogurt
- Mix all ingredients together in a bowl. Adjust salt to taste.
