Plum Sort-of-Sorbet with Honey Basil “Pesto”

I learned this little trick from making smoothies… if you freeze fruit and then blend it up, it’s a lot like sorbet.  And if you put the blended fruit back in the freezer for a bit then it really tastes like sorbet!  AND this is super easy.

I was really excited about these plums because I had eaten so many of them when I visited Ken’s Top Notch Farm.  I used to have an aversion to plums because I choked on one when I was a kid but after I had the chance to walk through the orchard and eat them ripe from the tree, I’m a big fan of the plum.

I sliced them and put them in this freezer safe dish for a few hours while I made the rest of dinner and then ate dinner.  I whipped up with sorbet after everyone was done eating and just chatting away. I threw these in the Vitamix with some honey and blended it up into Sort of Sorbet.  I also put the basil and honey in a food processor and made a lovely syrup out of it.

Delightful Recipe

Serves 4

INGREDIENTS

  • 7 red plums
  • 1 small bunch of fresh basil
  • 1 to 2 Tablespoons of honey
  • 1 Tablespoon lemon juice
  • Halve and pit the plums and then slice them into wedges.
  • Put them in a freezer safe container and then pop them in the freezer for a few hours until they are completely frozen.
  • While they are freezing, put the basil leaves, honey and lemon juice into a blender and blend until smooth and the consistency of pesto or syrup.  Add more honey if you need to.
  • Take the frozen plums out of the freezer and put them in a clean blender and blend until they are a soft sorbet consistency.  If you want it to be firmer, put it back into the freezer safe container and put that in the freezer for a few more minutes to hours.  Check on it often until it’s the consistency you want.
  • Serve with the sweet basil “pesto” drizzled over top.  Enjoy!
