Overnight Oats with Apples and Pistachios

I took a bite of one of the apples and it was delicious but pretty ripe.  I decided to make a giant batch of overnight oats with all of the apples.  If you don’t know how to make overnight oats, get ready to be blown away by how freakin’ easy it is.  It is 1 part oats to 2 parts liquid.  The “liquid” could be yogurt, milk, juice, coconut water or whatever else you can think up.  Then you can go nuts and add whatever else you like.  For this one I did 1 cup of oats + 1.5 cups of Greek yogurt + .5 cup of coconut water + cardamom + honey + mint + pistachios + all the apples chopped up.  I mixed it up and stuck it in a big glass bowl in the fridge and the next day I served myself up some cold, hearty breakfast.

Delightful Recipe

INGREDIENTS

  • 1 cup of quick cooking oats
  • 1 1/2 cups Greek yogurt
  • 1/2 cup coconut water
  • Pinch of cardamom
  • 2 Tablespoons of honey, adjust to your taste
  • 1 bunch of mint finely chopped
  • 1/4 cup of pistachio meats, unsalted
  • 4 small apples peeled and finely chopped

Mix all ingredients thoroughly in a bowl and place in the fridge for 8 hours or overnight.  Serve and enjoy the next day!
