This was the last thing I made for our Hollywood Forever picnic. I wanted it to be a sweet, salty and tangy salsa for corn chips but it came out more like a salad. The nectarines were a little shy of ripe enough to do the salsa thing. It was a tasty little salad though and if you wait for your stone fruit to get nice and ripe and soft, I’m pretty sure this will make a good salsa.
I basically substituted the nectarines for tomatoes in a pretty traditional salsa. The thing is tomatoes are soft and juicy and my nectarines were still pretty firm. I also could have grilled them and that probably would have worked too.
This salsa salad was actually more popular at our picnic than I expected. No one seemed to care that it wasn’t the “right” consistency. And that’s what I love about cooking, just when I think something is “ruined” someone else puts it in their mouth and goes “yum!”
A perfect example of that is the first time my mom made rice for my dad as a married woman. My dad is from Iran and he loves rice, it’s by far his favorite starch. My mom was making some for him for dinner and she got distracted in the kitchen and burnt the rice. She was horrified! The first time she made rice for her new husband and she burnt it! What would he think?! My dad comes into the kitchen sees the crispy rice and goes “Oh wow, you made tadig! My favorite!” So nothing is ever ruined until it’s ruined.
- 2 small, ripe nectarines
- 1/2 small red onion diced
- 1 avocado diced
- 1 small jalapeno, seeded and minced
- 1/4 cup of chopped cilantro
- juice from 1 lime
- Salt and Pepper
Combine all of the ingredients in a bowl and add salt and pepper to taste. Serve with corn chips.
