If I’m going to do a picnic there has to be some slaw. Slaw is one of those things that gets better with time. I love it when it’s all fresh and crispy but then I also get excited about it as it “matures” and gets all soft and the flavors really meld together. I really liked this recipe because it used the entire broccoli. I just chucked that whole thing in the food processor with the grater on and voila! I love not having to waste the stem.
I got the recipe from The Kitchn which is one of my favorite cooking and recipe sites. This recipe called for currants but I had just received my CSA box the night before and I hadn’t gone out shopping for extra stuff so I didn’t have currants on hand. I did however have raisins and golden ones at that. A little side note is that I have a really stocked pantry. I have two kinds of raisins in there, barberries, all kinds of nuts, several varieties of canned tomato products, bags and bags of dried beans and pastas, oodles of dried spices and herbs, more types of vinegar than you can shake a stick at and so much more. I highly recommend cultivating a stocked pantry because it makes cooking so much more fun and easy when you don’t have to constantly run out to get stuff or when you have things on hand that make acceptable substitutions.
I had to show a lot of restraint around this slaw. I could have easily eaten half of it before our little picnic. I also had to shoo away my housemate several times because she was getting a little over zealous in her taste testing. 90% of the broccoli slaw made it to the picnic but it was all gone by the time we were ready to head home. So I never got to enjoy those more mature phases of this particular slaw. There’s always next time!
Adapted from The Kitchn
- 1 large head of broccoli
- 1/3 cup of golden raisins
- 1/2 small red onion finely chopped
- 3/4 cup slivered almonds
- 1/2 cup mayonnaise
- 2 Tablespoons rice vinegar
- 2 Tablespoons sugar
- 1 teaspoons salt
- Cut broccoli into pieces that will fit in the feed tube of your food processor. Shred the broccoli in the food processor using the grater disk (the attachment with the holes, not the blade).
- In a large bowl, combine the shredded broccoli, riasins, red onion, and almonds.
- Whisk together the mayonnaise, lemon juice, vinegar, sugar, and salt.
- Pour the dressing over the broccoli mixture and stir to combine.
- Taste and add more salt, if needed.
- Allow to sit for 30 minutes (or an hour in the fridge or cooler if you’re taking to a picnic) so the flavors can mingle.
